Chili Cornbread Casserole

This is easy to reheat in the microwave.

1/4 lb. ground beef
1 pkg. taco seasoning mix
1 8oz. can tomato sauce
1 can Hormel Chili w/o beans
About 6-8 oz. shredded cheddar cheese
1 package (7 or 8 oz.) cornbread mix
1 egg
1/3 cup milk

Brown ground beef in a large skillet and drain. Add the taco seasoning mix, tomato sauce and Hormel Chili without beans. Place in a casserole dish. Top with shredded cheddar cheese.

Make the cornbread mix using the one egg and 1/3 cup of milk and pour on top of the beef mixture. Bake in a 350 degree oven for about 20 minutes or until cornbread is golden. Serve with Salsa and Sour cream on top if desired. Delicious.

I always use coupons when I shop. It saves me a lot of extra money. I look for the things that are already on sale then use my coupons to get an extra boost. It actually only takes you a few minutes to go through the Sunday paper each week to see what is on sale and see what you have for coupons and go from there. I like to stock up when things are on sale and I have the extra coupons for things. Plus some stores like Walgreens and Rite Aid will let you use your coupon and their store coupon on the item so you are getting more of it. Plus if it is something that has a rebate then you are really getting money back and sometimes even getting it for FREE with money back to boot. It really pays off when money is tight.
Give it a try you never know if you like something if you don't try it. What could you lose but GAINING some extra money in your pocket for a rainy day.

Resurrection "Sunday Story" Cookies

This is a great way to tell "The Story of Resurrection. "
Start on Saturday and finish Easter Sunday morning...

Resurrection "Sunday Story" Cookies

For this recipe you will need:
1 c. whole pecans
1 tsp. vinegar
3 egg whites
pinch salt
1 c. sugar
zipper baggie
wooden spoon
tape
The Holy Bible

Preheat Oven to 300 F. (this in important - don't wait till you are half way done with the recipe!) Place pecans in zipper baggie and let children beat them with the wooden spoon to break into small pieces. Explain that after Jesus was arrested he was beaten by the Roman soldiers.

Read John 19:1-3.

Let each child smell the vinegar. Put 1 tsp. vinegar into mixing bowl. Explain that when Jesus was thirsty on the cross he was given vinegar to drink.

Read John 19:28-30.

Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life.

Read John 10:10-11.

Sprinkle a little salt into each child's hand. Let them taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin.

Read Luke 23:27.

So far the ingredients are not very appetizing. Add 1 c. sugar. Explain that the sweetest part of the story is that Jesus died because He loves us, He wants us to know that and He wants us to love Him as well.

Read Psalms 34:8 and John 3:16.

Beat with a mixer on high speed for 12 to 15 minutes until stiff peaks are formed. Explain that the color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus.

Read Isaiah1:18 and John 3:1-3

Fold in broken nuts. Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid.

Read Matthew 27:57-60.

Put the cookie sheet in the oven, close the door and turn the oven OFF. Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed.

Read Matthew 27:65-66.

GO TO BED! Explain that they may feel sad to leave the cookies in the oven overnight. Jesus' followers were in despair when the tomb was sealed.

Read John 16:20 and 22.

On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow! On the first Easter morning, Jesus' followers were amazed to find the tomb open and empty.

Read Matthew 28:1-9.

It's going to be a long 3 days

We had a big storm last night and the rain just came pouring down along with lightning. Well in the process we lost our satellite for the TV. Not to bad it was 2 in the morning so I figured it was time for bed anyways. Well I get back up this morning and no TV still. I putter around the house and again I try the TV around noon only to find out STILL no TV. So I decide to call and find out what the problem is. After much deductioning (yes I know not a real word) she determines I have satellite problems DUHHHH- it's that what I called her for in the first place. So she says they have to send a Tech guy out Sunday between 8-Noon and it will cost me $29.99. I say hold the train- why do I have to pay for the service call? She says it's not for the call it's for the Tech Guy. I told her I didn't care I am not to blame for the failure of the satellite and I am NOT paying for him to come fix it. Then she says she can charge me less because I am such a good customer. I told her I still wasn't paying and beside the dish isn't even mine it goes back to them if I decide I don't want the service any more. So then she says I can waive this fee for THIS TIME ONLY if that would be to my liking. I said YES IT WOULD.
So why should I pay for a person to fix something I didn't break in the first place.
I really liked cable better- at least there wasn't a charge for something like this whenever they needed to come out. But unfortunately I live in the country now and all I can get is satellite.
Well---I hope your day has started out on a better note.

On a brighter note-----
I heard from hubby this morning- He is heading to TN. with his brother and nephew- going to see his folks. His dad had a small stroke a few weeks a go so the boys figured they should go see him when they had the time off work. He had a triple by-pass a number of yrs ago and they don't know if this is God's way of telling them there aren't many more yrs. left for this man. Anyways Larry said they left at 5 this morning and when he called at 9 they were 158 miles outside of Columbus, Ohio. They should get there around 6 tonight. They are driving straight through. Gonna stay about 4-5 days then drive straight back.

Easy Cake Recipe

Buy a box cake mix, even try to catch it on sale so it will be cheaper or get store-brand. If it is a white or yellow cake add 10 oz diet sprite*, diet 7-up*, or the 0 cal sparkling water*. Then cook as instructed on the box. DO NOT add eggs, butter, oil, water or anything else to the mix. Just the soda and the cake mix itself.

Diet Dr. Pepper* or Diet Coke* are fine for chocolate cakes, but if it is added to the yellow cake mix it makes it a yucky gray color. Which is still fine to eat, just looks bad. With NO added calories, NO eggs, NO milk, NO water and NO oil- how easier could it get!

You'll have a VERY MOIST cake for under a buck plus the cost of the pop (you can get a whole 2 liter for around 99cents and you only need 10 oz of it.) So you'll even have some left over to drink with the cake.

Cook as directed on the box and decorate as you usually would.
Now enjoy!!!!
